These Chocolate Peanut Butter Bliss Ball Bubbles featured on Millennial Kitchen (recipe and photo from Christine at the equally fabulous Conscious Cooking) look absolutely amazing, and as they are raw, vegan, and gluten-free, they’d make a great treat to take just about anyone!
1 cup + 1/4 cup unsalted peanuts
1/2 cup gluten-free oats
4-5 medjool dates, pitted
2 Tbsp chia seeds
2 Tbsp 100% cocoa powder
2 Tbsp maple syrup
1 T coconut oil
In a food processor, process all ingredients until everything is broken up and combined. The mixture should stick together when pinched with your fingertips.
Add another 1/4 cup of peanuts and quickly pulse a few times so the nuts are chopped into larger bits for some crunchiness.
Roll into bite-sized balls.
Refrigerate and enjoy!
